Either too cold or too drafty, and in the oven, too hot. When I was growing up in Northern New Brunswick (where I learned to make and knead bread), we had a hot air furnace, and I used to stand the bread dough over the hot air register. It was odd shaped and very dense (in my excited haste, didn’t sift the flour!!) and discovered what I thought was a Tablespoon on my set of charity shop measuring spoons was in actual fact half a Tablespoon (isn’t that the same as a teaspoon ?) so no wonder the loaf turned out tasting like it did. Not enough sugar, salt, or fat! I prefer a denser loaf and will be experimenting to create the perfect loaf for my preferences. I’ll keep you posted. What kind of bread do you like. Model J5741 I want to make wheat bread, but it doesna??t have a setting for this. When I use the setting for white bread, the dough doesna??t rise enough. I assume that the solution would be to create a custom program with longer rising periods. However, the mfra??s manual instructions for doing so have no apparent relationship to what I see when I look at the control panel. The problem is not just the writera??s lack of proficiency in English a?? though that is evident in this section as it is throughout the manual. The more serious problem is a lack of systematic thinking prior to the writing. You can use a store bought bread mix and follow the directions on the box. The machine can make 1.5 lb loaf or up to 2 lb. Bake time is 4 hours and 10 min for Country White Bread in Basic Mod setting. If you want to have bread ready in time for dinner, start the machine at 12:30 pm and bread should be done close to 5 pm. The timer will buzz on the machine when it is done and you remove the loaf pan, let it cool for a min and remove the loaf on a cutting borard.

You can make your own mix, with the recipe in the manual. I only have used the store box kits and they work just fine in my model Cm725. Hope this is helpful to people that have a Chefmate machine.
