The 2 different size SS steam trays work perfectly. It has 10 cup capacity even when using the steaming trays. The SS exterior looks great and is easy to clean. In my opinion this is mandatory. If you don't stir the rice once it is done cooking, then a thin film develops on the bottom layer of rice. This was not noticeable on our old aluminum rice cooker because there was Always a layer of rice stuck to the bottom of the pot that had to be soaked before it could ever be removed (yuck). So if you want to use all the cooked rice in the pot then it is best to stir the rice once it finishes cooking and before you serve it. Next as far as the other two reviews are concerned my feedback is as follows: on the one directly below, the person states that it isn't even about this model of rice cooker. This person is really reviewing the company and its policies and procedures (helpful) but it is not a review of this model rice cooker and therefore its 2 star rating is not correlated. On the next review, the lid is designed to be somewhat loose fitting so that the steam can escape. Our old Salton had a hole in the glass lid so the steam could escape. This lid has no hole but has 3 small bumps to allow a small gap between the lid and the rice pot. This is needed to allow the steam to escape or it would not cook properly. Next, the bell works well for us.

We can clearly hear it if we are in another room doing something else while the rice is cooking. We hear it about 90 of the time. The nice thing is you're expecting it, so if you don't hear it go off, then you have that little reminder to go and check its status. I never heard our old Salton because it had no bell. Lastly, the AC plug has a hole in it to remove the plug safely and easily. This may sound silly but many people unplug items by pulling on the electrical cord (and not the molded plastic) which over times damages the cord, this unit has a neat patented hole that makes it very easy and safe to unplug the unit which is great because unplugging them is generally the only way to turn off a rice cooker. Overall I highly recommend this unit. Only time will tell on how long the non-stick coating holds up but that is true of all products made with non-stick. To extend the life of the non-stick the manufacturer highly recommends hand-washing the rice pot (No Dishwasher). It cleans up so easy that this has not been an issue and is common of most, if not all, non-stick rice pots. Based on our experience, we really enjoy the Breville RC19XL Gourmet Rice Duo and believe that it deserves 5 stars. Foremost, the glass lid is ill-fitting on the base pot, providing lots of leeway for steam to escape during rice cooking. Secondly, the bell mechanism is, frankly, an overrated feature here. The sound produced is far too quiet for it to be audible to anyone not in the immediate vicinity of the kitchen. Despite these two shortcomings, the two stainless steel steaming baskets are a useful feature for the multi-tasker or time-pressed cook. While the Breville RC19XL does a great job in its chief function-- steaming rice--for serious rice aficionados who like their rice cooked just right, there are countless models on the market better suited to producing perfectly steamed rice in less time. Overall, a not-too-pricey cost for a modern design and general practicality.

RICE VARIATIONS Savory Rice Prepare the rice in the Rice Duo as specified, substituting all the water with the same quantity of chicken, beef, fish, or vegetable stock. Apple juice, orange juice or pineapple juice may be substituted for half of the water quantity. Sweet Rice Prepare the rice in the Rice Duo as specified substituting half the water with apple juice, orange juice or pineapple juice. Cooking rice with milk or cream is not recommended as it will burn onto the bottom of the removable cooking bowl. Saffron Rice Add 4 teaspoon of saffron powder or 2 saffron threads to every 2 cups of water. Use the white rice cooking tables. Mix well. Arborio Rice Arborio rice is short round-grained pearly rice often used for Italian risotto cooking. Use the brown rice cooking tables. Jasmine Rice Jasmine rice is fragrant long grain rice. Use the white rice cooking tables. Basmati Rice Basmati rice is an aromatic long grain rice. Wild Rice It is not recommended to cook wild rice alone in the Rice Duo as it requires a substantial Steamed foods retain most of their nutritional value when cooked in the Rice Duo. HINTS AND TIPS FOR STEAMING DUMPLINGS Fresh or frozen dumplings and savory buns can be steamed. Place small pieces of parchment paper, or cabbage or lettuce leaves, under the dumplings to avoid sticking to the steaming tray. Place oil and butter into the removable cooking bowl. Press selector control to Cook. Heat for minute, add onion. Cook for 2 minutes, stirring constantly. Add rice, stir to coat with oil. 3. Add the stock, cover with lid and cook until selector control switches to Warm. Stir once during cooking. 4. Stir rice and fold through chicken, tomatoes, cheese, basil and pepper. Replace lid and stand for 0 minutes on Warm before serving. Place the oil into the removable cooking bowl. Press selector control down to Cook. Heat for minute, add leek and garlic. Add rice, stir to coat with oil. 2. Add tomatoes, wine and stock. Cover with lid and cook until selector control switches to Warm. Stir once during cooking.

MEXICAN RICE WITH ROASTED CHILES, CORN AND FRESH CHEESE 2 tablespoons butter 2 tablespoons olive oil small onion, finely diced clove garlic, minced 2 Rice Duo cups long grain white rice 3 2 cups chicken stock 3 medium, fresh chiles poblanos, roasted and peeled, seeded and cut into short strips cup fresh corn (cut from the cob) or frozen, defrosted cup of crumbled Mexican queso fresco (or other fresh cheese like farmer s cheese) 2 cup packed cilantro, roughly chopped 2 cup toasted pepitas (pumpkin seeds), optional. Place oil into the removable cooking bowl. Heat for minute, add onion and garlic. Add rice, stir to coat with oil. 2. Add stock. Cover with lid and cook for 0 minutes. Stir in roasted chiles and corn. Replace lid and cook until selector control switches to Warm. 3. Stir rice mixture and fold through queso fresco, cilantro and pepitas. Replace lid and let stand for 5 minutes on Warm before serving. RICH CHEESY RISOTTO Serves tablespoons butter 2 tablespoons olive oil small red onion, finely diced 2 cloves garlic, crushed 2 Rice Duo cups Arborio rice pinch saffron powder 4 cups chicken stock teaspoon grated lemon rind 4 cup grated Swiss cheese 4 cup grated Parmesan cheese 2 cup Brie cheese, finely chopped tablespoon snipped garlic chives freshly ground black pepper, to taste. Place butter and oil into the removable cooking bowl. Add rice, stir to coat with oil. 2. Add saffron, stock, and rind. Stir once during cooking. 3. Stir rice and fold through cheeses, chives and pepper. Heat for minute, add onion and mushrooms. Cook for 5 minutes or until the mushrooms are soft, stirring constantly. Add rice, stir to coat with oil. 2. Add stock. Cover with lid and cook until selector control switches to Warm. Stir once during cooking. 3. Stir rice and fold through cheese and parsley.

SEAFOOD PAELLA Serves cup olive oil red onion, diced 3 cloves garlic, crushed teaspoon freshly grated ginger 2 Rice Duo cups long grain rice, washed 4 cups seafood or chicken stock lb (500g) mixed seafood (shrimp, calamari, octopus, mussel meat, white fish fillet) 2 cup roasted red pepper, peeled and chopped tablespoon fresh lime juice 2 tomatoes, diced 4 teaspoon chili powder 2 tablespoons chopped fresh cilantro. Heat for minute, add onion, garlic and ginger. Stir in seafood, pepper and lime juice. Replace lid and cook until selector control switches to Warm. 3. Stir rice mixture and fold through tomatoes, chili and cilantro. SUSHI RICE 4 Rice Duo cups short grain white rice, washed 4 cups water 2 tablespoons rice vinegar 2 tablespoons sugar 2 teaspoon salt tablespoon rice vinegar, extra. Place washed rice and water into removable cooking bowl. Press the selector control down to Cook. 2. Cover with lid and cook until selector control switches to Warm. 3. Stir rice, replace lid and stand for 0 minutes on Warm. 4. Transfer rice to a large, shallow dish. 5. Heat vinegar, sugar and salt in a small saucepan over a low heat until sugar dissolves. Sprinkle vinegar mixture over rice, mix well. 6. Use immediately as required in Sushi recipes. TIP: Some Sushi recipes require the rice to be shaped by hand. To do this, combine tablespoon rice vinegar with 4 cup water. Use this mixture to keep hands wet while shaping rice. TIP: Any leftover Sushi Rice can be frozen. Recommended Usage - Seaweed Rolls 6 sheets Nori seaweed Sushi Rice Wasabi paste, to taste Add any combination of filings such as: Smoked salmon, thinly sliced Japanese pickled ginger and vegetables Finely sliced cucumber Sashimi salmon or tuna Avocado Cooked asparagus Fresh crab Finely shredded lettuce Mayonnaise. Place a sheet of seaweed, shiny side down on a sheet of parchment paper or a bamboo rolling mat. 2. Spread a portion of the rice over a third of the Nori sheet, leaving a border. 3.

Spread a very thin layer of wasabi paste in a narrow line down the center of the rice. Top with a selection of fillings. 4. Using the paper or mat as a guide, roll up the Nori sheet to enclose the filling. Press to seal the edges. 5. Use a very sharp knife to cut the roll neatly into small portions. 6. Repeat with remaining Nori sheets and filling. Place washed rice and stock into the removable cooking bowl. Press selector control to Cook. 2. Cover with lid and cook until selector control switches to Warm. Stir once during cooking. 3. Allow rice to stand, covered with lid, for 0 minutes on Warm. 4. Transfer rice to a large, shallow dish to cool. This helps to keep rice grains separate. 5. In a large serving bowl, toss cooled rice with pepper, feta cheese and olives. 6. Combine pesto, salad dressings and chili sauce in a screw top jar. Shake well and toss through rice salad just before serving. Serve chilled. ORIENTAL WILD RICE SALAD Serves tablespoons oil 2 cloves garlic, crushed 4 shallots, thinly sliced 2 4 Rice Duo cups wild rice mix, washed 4 cups chicken stock 7 oz (200g) snow peas, blanched 4 cup smoked almonds, halved 2 tablespoons balsamic vinegar 3 teaspoons soy sauce teaspoon sesame oil 2 tablespoon sweet Thai chili sauce 2 tablespoons rice wine vinegar. Heat for minute, add garlic and shallots. Add rice, stir to coat with oil. 2. Add stock, cover with lid and cook until selector control switches to Warm. Stir once during cooking. 3. Allow rice to stand, covered with lid, for 0 minutes on Warm. 4. Transfer rice to serving dish. Stir in snow peas and almonds. 5. MANGO TROPICAL RICE PUDDING Serves Rice Duo cups short grain white rice, washed cup mango nectar cup water 5 oz (450g) can sliced peaches, drained, juice reserved 2 teaspoons lime zest 2 cup coconut cream 4 cup passionfruit pulp (can be found frozen in Asian markets) tablespoon cinnamon sugar. Place rice, mango nectar, water, and reserved peach juice into the removable cooking bowl and stir to combine. Cover with lid and press selector control to Cook. 2. Cook until selector control switches to Warm. Stir once during cooking. 3. Stir rice mixture and fold through lime zest, coconut cream and passionfruit pulp. Replace lid and stand for 0 minutes on Warm. 4. Serve warm with peaches and dusted with cinnamon sugar. WILD BERRY RICE PUDDING Serves Rice Duo cups short grain white rice, washed 2 cups water 4 cup warmed honey 2 tablespoons butter, melted cup cream 2 cup fresh or frozen blueberries 2 cup fresh or frozen raspberries 2 cup fresh or frozen blackberries 2 cup fresh or frozen strawberries 4 cup confectioners sugar 4 cup water 2 tablespoons port. Place rice and water into the removable cooking bowl. Stir once during cooking. 3. Stir rice and fold in honey, butter, and cream. Wash and dry the fish. Cut 2 slits at a 45 angle through each side of the fish. Into each slit, place some ginger and a slice of lime. 2. Place half of the cilantro into the cavity of the fish. Place the fish into the steaming tray. 3. Pour 3 Rice Duo cups water into the removable cooking bowl. Cover with lid and press the selector control to Cook. When the water is boiling, place the steaming tray into removable cooking bowl, replace lid and steam fish for 5 minutes or until cooked when tested. 4. Remove fish and place onto a serving platter. 5. Combine soy, oil and shallots, pour over the fish. Serve immediately with jasmine rice.
