W HILE JUICE extractors—touted by manufacturers as veritable fountains of youth and renewed health —are hardly household words in the kitchens of the 70's, they are making their way into more and more homes, as consumers become increasingly health conscious. Years ago, their use was limited largely to health food faddists or those restricted to a liquid diet. Popular combinations include carrot, ceiery and parsley juice, a combination of fruit juices, such as apple and strawberry or apple and orange. All of the machines tested here performed well enough and all could be recommended for the ability to do a satisfactory job in juicing the common fruits and, vegetables. They differed widely, however, in price, facility of use, ease of cleaning, and in their ability to extract juice from leafier vegetables, such as parsley and spinach. All were relatively messy and difficult to clean. All but the Champion juicer work on a centrifugal force principle.

The centrifugal machines essentially grate the foods and the juice is forced from the vegetables or fruits under pressure and by high?speed thrust. The Champion works on a masticating principle.Similar in design to the Braun Multipress, the Invento was a simple machine and one of the easiest to clean. Made of lightweight plastic with a steel blade and aluminum filter, the Invento's major drawback was that it was noisy and its plunger should be a little longer, to force the foods into the container. In operation, the Invento left unground parsley in big lumps in the strainer as many of the machines do, but its fruit and vegetable juices were fine and tasty, without excessive pulp remaining in the container. It's a good buy for someone who won't be depending upon it for heavy daily use. It's a convenient machine to use and did a good job at extracting parsley and the softer leafy vegetables. A good?looking, bright yellow machine, the AEG's biggest drawback was that it was even more difficult than most to clean, because it made use of an annoying plastic wrench (which doesn't seem to be strong enough to withstand daily use over long periods) to tighten the machine's disk and sieve. The machine, was also awkward and difficult to clean. Its centrifugal basket has such a fine screen that it took much longer than others to clean out all the pulp. It was moderately simple to use, clean and reassemble and many of its juices, came out thicker and heartier than those from some of the other extractors, leading to the assumption that you were getting more of the fruit.It was the only machine with an antifoam screen, which took the “head” off the juice, and its large container allowed you to juice large quantities without stopping. It also came with a container for the extracted juice —most others required the user to supply a glass or similar container to catch the juice. The Oster also came with a giant “toothbrush” to clean out the centrifugal basket.

Obviously, the Oster engineer was one of the few to think about cleaning what had been designed. While it had two feeder openings—an automatic feed and a manual feed—there did not seem to be much difference between the two, except that for the automatic feed manufacturers suggest cutting the vegetables rather than feeding them in whole. So there was no time saved on automatic. A metal hinge also got in the way of feeding foods into the extractor and a plastic wrench to tighten parts after disassembling for cleaning was another nuisance. The machine was faster and quieter than others, but not worth the high price. The model tested was made of stainless steel and had a sturdy steel basket and heavy steel blade. While it took longer for this machine to extract the juices, ?its performance was superior turning out hearty drinks and leaving less pulp behind. The machine also continued to spin long after it was turned off, providing an extra bit of juice. It was no joy to clean, however, since the design of the steel basket made it difficult to flush out all the pulp. It definitely won the juicer beauty contest with its clean white, sleek European design. It was a quiet machine, but slightly awkward to use because of the top steel rim that got in the way when the machine was in use.A safety mechanism that automatically turns the machine off when it is overloaded is included. It looked more like a sausage?stuffer and required a Rube Goldberg?like assortment of gadgets to make it convenient to use—a plastic “throw?up” bag attached to the sausage end with a rubber band, making it easy to throw away the pulp, and a common steel strainer that acts as an anti?foamer. It had one?third horsepower motor—bigger than all the rest—and was all metal, except for the wood plunger and plastic coated blade. It was one of the easiest to clean, but was slower in producing juice than many. With a single?blade cover removed, the machine also turned out a pleasant?

tasting peanut butter, and it accepts a flour grinder attachment, which must be purchased separately. It was small and compact and with only four parts to assemble and disassemble definitely the prize as the easiest to clean. It also juiced faster than many of the other machines. But it has Its drawbacks. It was noisy, it was the only machine to leave foods—especially carrots and apples—in big lumps and at one point actually jammed with too many carrot pieces. Its feeder opening was just a bit too small, making it necessary to cut up larger carrots before juicing. And, worst of all, the drum that hold the food fibers was too small, and needed to be emptied with every glass of juice pepared. While its simplicity was plus, the machine would only suit an individual who wanted to make one glass at a time, and certainly wouldn't suffice if one wanted to do large quantities of juicing. As a juicer, the Norelco matched the other machines in all functions. Its noise level was moderate, its rectangular design allowed one to juice large quantities of fruits and vegetables without stopping to reload, and it performed quickly and well with carrots and apples, and as well as any with the leafy parsley and spinach. This sturdy machine was easier than most to clean and, with the blender attachment, would be a model to consider. Juicing Tips While there's no trick to using a juice extractor, it will help to know how to prepare foods for the juicer and what foods offer tasty combinations. All foods should be thoroughly cleaned in cold water, and used as freshly as possible. The juice produced will only be as good as the food it is extracted from. Most foods can be fed “whole” into the juicer. Carrots don't need to be peeled, apples, tomatoes and peppers needn't be cored, just quartered. All juices should be served immediately, and definitely shouldn't be stored in airtight containers for more than 48 hours after preparation. They not only lose their vitamin content, but can spoil.

Be cautious about combining strongly flavored juices, such as beets, lettuce, parsley, spinach or watercress. They not only taste strong, but can be hard on the digestive system. They're best combined in lesser proportions, with lighter juices, such as carrot or apple. Soft?textured fruits, such as bananas, peaches, pears, nectarines and strawberries produce a thick, nectarlike product that is best combined with lighter juices such as apple or orange. When processing, always process the soft fruits first, followed by the harder ones. Some extractors are better than others at processing the leafy vegetables. When combining parsley, spinach, lettuce or watercress, process them before other foods, wadding them into compact balls as they're fed into the machine.
